While entertaining this holiday season make a great impression on the discriminating palettes of your friends and family. Instead of the usual cheese and cracker tray, create an appetizer using uncommon ingredients, such as leeks and artichokes. Artichokes are nutrient dense so for the 25 calories in a medium artichoke, you're getting 16 essential nutrients.
Makes: 3 cups
1 cup mayonnaise
1 pkg Knorr Cream of Leek Soup Mix
1 cup sour cream
1 can artichoke hearts
1 cup shredded mozzarella cheese
1 clove garlic, minced
Heat oven to 350 F. Combine all ingredients in a medium bowl and spread evenly into a one-quart (1L) casserole dish. Bake uncovered 30 minutes or until heated through.
Serve with sliced crusty French bread, crackers or tortilla chips.
