Since lemons are available throughout the year, they make an attractive, affordable and accessible decor item and recipe ingredient.

Tart up recipes

Nothing adds zest or intensity to a dish like a squeeze of lemon.

• Use hollowed out, scalloped lemons to serve side dishes such as rice and desserts like lemon custard, sherbet or mousse.

• If you are reducing your sodium or fat intake, try squeezing a wedge of fresh lemon on salads, steamed vegetables, soups and stews. You'll never miss the salt or butter.

• Lemon juice added to rice prevents it from sticking and enhances its white colour.

 

Lovely lemony decor

There are countless ways to include whole and sliced lemons into party decor, adding scent and colour to florals, candles and place settings.

Lemon thyme foie cookies

2 oz foie gras
6 oz butter, slightly softened
4 oz corn flour
4 oz pastry flour
1 tsp chopped lemon thyme
1/8 tsp crushed fennel seed
1/2 tsp honey
1 tsp balsamic vinegar
pinch smoked paprika
pinch salt
pinch black pepper

Mix all ingredients in the food processer to combine.

Once dough has come together, flour it slightly. Roll out on a half tray with a little flour.

Cover with parchment and chill. Once ready to use, cut with cookie cutter. Put cookies on lined half tray. Egg wash and sprinkle with a little coarse salt. Bake at 300 F for about 40 minutes.
