Homemade cookies make your day complete

It doesn't matter that baking heats up your house, when you need to eat cookies, you need to eat cookies. And these cookies make putting your head in an oven well worth it.

Peanut butter oatmeal chocolate chunk cookies
1 1/2 cups crunchy or smooth peanut butter
1/2 cup butter, softened
3/4 cup granulated sugar
2/3 cup packed brown sugar
2 eggs
1 1/2 tsp vanilla
1 cup quick-cooking oats
3/4 cup flour
1/2 tsp baking soda
1 pkg (eight squares) semi-sweet chocolate, chopped

Heat oven to 350 F.

Beat peanut butter and butter in large bowl with mixer until creamy. Add sugars; beat until light and fluffy. Blend in eggs and vanilla.

Mix oats, flour and baking soda. Add to peanut butter mixture; beat until blended. Stir in chocolate. Drop teaspoonfuls of dough onto baking sheets one-inch apart.

Bake 10 to 12 minutes or just until centres are set. Cool on baking sheets for three minutes. Remove to wire racks; cool completely.

Oatmeal walnut sensations
1 (200 g) package oatmeal cookie mix
2 cups walnuts, finely chopped
1/4 cup all-purpose flour
1/2 cup butter, softened
36 squares of caramel chocolate bar
36 walnut halves

In a bowl, whisk together oatmeal cookie mix, chopped walnuts and flour. Stir in butter to form stiff dough.

Shape a heaping tablespoon of dough around chocolate caramel pocket and arrange on a parchment-lined baking sheet two-inches apart. Press a walnut half onto each cookie.

Bake in the centre of a 350 F oven until lightly golden, about eight to 10 minutes.

Let cool one minute before transferring to rack to cool completely.

Store in an airtight container for up to three to five days. Freeze up to one month.

 

California walnut jewel squares
1 1/2 cups graham cracker crumbs
1 can (425 g) sweetened condensed milk
3 cups walnuts, chopped, divided
2 cups candied fruit, chopped

In bowl, stir graham cracker crumbs, condensed milk and half of the walnuts. Pat in the bottom of a greased eight-inch square baking dish. Top with remaining walnuts and candied fruit.

Bake in a 350 F oven until walnuts are golden and base is set, about 30 to 35 minutes.

Let cool completely and cut into squares.

Makes 16 squares.

Variation
Walnut toffee squares
Replace the candied fruit with 1 cup semi-sweet chocolate chips and 1 cup toffee bits.
