Tzatziki chicken sandwich
1 small chicken breast, boneless and skinless
1 tbsp olive oil
Salt and pepper to taste
4 slices bread
2 tbsp tzatziki
1 grilled red pepper or six thin slices of cucumber
2 lettuce leaves
Place chicken breast on a baking sheet. Baste with olive oil, then salt and pepper.
Cook in oven at 350 F for about 20 minutes or until meat thermometer reads 170 F and meat is no longer pink inside. Let cool and slice.
To make each sandwich, spread bread slices with tzatziki sauce, then top with chicken, half of grilled red pepper (or cucumbers) and lettuce.
